Dr. Seuss’s Birthday: National Read Across America Day

Dr. Seuss was an author and illustrator, who was responsible for many of my childhood book memories. I learned my ABCs and wacky zany words that started with each letter, and my first memory of a dish, because of him. Green Eggs & Ham was one of my favorite books, but I have yet to find an actual green egg!!

To make this fun version, I finely chopped spinach in the food processor and then blended it with egg whites. I then cooked over low heat to avoid browning the egg and folded it like an omelet. Meanwhile, I grilled some thick-cut breakfast ham and an English muffin. This is a great way to sneak some veggies in for the kiddos, rather than using food coloring. Enjoy!
